Cherry Sweet Potatoes
2 medium sweet potatoes
2 Tbsp American Premium Blends Cherry Harvest concentrate
1 Tbsp light brown sugar
1 Tbsp butter, melted
1/8 tsp ground nutmeg
Chopped toasted pecans for garnish
Preheat oven to 400ºF.
Clean the potatoes and cut in half lengthwise; you don’t need to peel them. Lightly oil cookie sheet and place potatoes on it cut-side down. Bake the potatoes for 30 to 40 minutes or until almost tender.
Combine the Cherry Harvest, brown sugar, butter, and nutmeg. Turn potatoes cut-side up and brush with cherry mixture. Bake 5 to 10 minutes or until tender. Sprinkle with pecans. Serve hot.
