Cherry Harvest-Amaretto Cream Sauce



2 (3 ounce) Medallions of Beef Tenderloin
2 ounces Cracked Black Pepper
2 Tbl. American Premium Blends Cherry Harvest concentrate
4 tsp. Amaretto Liquor
1/2 cup Heavy Cream
1 tsp. Chopped Garlic
Salt and Pepper To Taste

Season Beef Medallions with salt and a good amount of cracked pepper.

Sear and caramelized one side of the medallions in a very hot sauté pan with 1 tsp. olive oil, turn over and sear the opposite side until well caramelized.

Remove the medallions from the pan and place on a side plate until sauce is complete.

Add garlic and sweat. About 20 seconds.

Deglaze with the amaretto and reduce slightly. About 30 seconds.

Add the heavy cream and let reduce until thick. About 1 minute.

Add the American Premium Blends Cherry Harvest concentrate and season with salt and pepper to taste.
