Cherry Drizzled Grilled Asparagus Prosciutto Wraps
24 spears of Asparagus
12 slices of Proscuitto
½ tsp. salt
1¾ oz. oil
2 cups balsamic vinegar
2 oz. American Premium Blends® - Cherry Harvest Concentrate
In a 1.5 qt. sauce pan pour 2 cups of Balsamic Vinegar and 2 ounces of the Cherry Harvest Concentrate, bring to a bare simmer and gently reduce until it coats a back of a spoon and drizzles like syrup.
Put trimmed asparagus into a pot of boiling water and cook for 3 minutes. Drain and shock in cold water to stop cooking. Leave for 3 minutes then drain again.
Take a slice of prosciutto and cut it in half , fold it lenghtwise. Place a spear of asparagus on prosciutto and wrap so the aspargas lay flat. Grill it on both sides till prosciutto is slightly crisped. Remove from grill and drizzle with sauce.
